The T-bone Steak is basically two great steaks in one. One side is the tenderloin, and the other is a New York steak. The T-shaped bone, which is in the center of the two cuts, gives it its obvious name. The bone in the middle protects moisture and flavor, making it one of Clarice's personal childhood favorites.
