Description
Also known as the Strip Loin, Shell Steak or Kansas City, this cut is taken from the short loin. The strip steak consists of a muscle that gets very little exercise, so it is tender, and does not require a lot of extra attention.
Cooking Tips
Pan seared New York with caramelized onion and herb butter. Season steak with fresh pepper, and a little salt. Let temper for an hour before cooking.
Let steak rest after cooking.
