Description
Our Andouille is a robust, heavily smoked and spicy sausage. It’s flavored with three types of chilies, fresh garlic, herbs and spices. One tester commented that it was the brash, explosive big brother of linguica. In a way this is true, but I think the more subtle notes of herbs and sweet spices make the andouille more complex. Linguica is folk music. Andouille is straight up New Orleans jazz.
Andouille is essential in classic Creole dishes like jambalaya and red beans and rice. It lends a spicy note to egg dishes and adds a complex richness to summer vegetable dishes. And those who thrive on spice will enjoy right off the grill.
